GF Pizza Dough

Here is a good recipe for pizza dough, I usually make ~ 6, 12 inch pizza's and freeze half for later. I have also used it to make pizza bread and bread sticks. If I don't have milk powder I use milk instead of water and it works fine.

GF Pizza Crust


  • 700 g GF Flour Mix ( I like ⅓ teff, ⅓ sorghum and ⅓ potato starch)
  • ¾ c. dry milk powder
  • 1 Tb. xanthan gum
  • 1 ¼ tsp. salt
  • 1 ¼ Tb. sugar
  • 1 ½ Tb. instant yeast
  • 1/3 c. oil
  • 5 egg whites (room temp. can warm up eggs under hot water)
  • 1 ¾ c. warm water (105-115 degrees; reserve some)


Combine dry ingredients in mixing bowl. Add oil and egg whites and mix on low speed. Add the water until dough is thin but not watery. Let it mix a while before deciding to add more. Mix on high speed about 3 minutes. Let rise about 40 minutes. Roll out the dough onto parchment paper and put into 400 degree oven for 8-10 minutes at this point you can freeze the pizza crusts for later use.


For pizza: add pizza sauce, cheese and toppings. Bake about 15 minutes more. This second bake does best one at a time, or add the second one half way through the time for the first one.


To make pizza bread just push the bread out onto a floured surface to about 1- 1 ½ in thick and top with pizza toppings, I prefer salami and cheese. Then roll it into a long roll, brush with oil and put 4-5 small slits on the top then bake at 400 degrees for 30 - 40 minutes or until light brown.


To make bread sticks: after rising put dough in lg plastic bag and cut off one corner then squeeze into long lines on a baking sheet covered with parchment paper or a silpat mat. Then sprinkle with Parmesan cheese and bake for ~20 minutes.
